From the day the cherries were harvested, every processing decision was intentional, and every roast was refined to express exactly what I believed this coffee was capable of becoming.\u003c\/p\u003e\n\u003cp\u003eI've cupped this coffee countless times throughout its journey, and even today it continues to surprise me. Rather than telling you how good it is, I'd rather let the cup speak for itself. This gentle roast profile preserves the vibrant fruit character, delicate aromatics, and lively acidity developed during processing, allowing the coffee's natural sweetness and complexity to shine with remarkable clarity.\u003c\/p\u003e\n\u003cp\u003eOnly perfectly ripe Chandragiri cherries from a single harvest at \u003cstrong\u003eKalyancool Estate\u003c\/strong\u003e were selected for this limited microlot. Every cherry was meticulously hand sorted before being sealed in an anaerobic environment, where the coffee underwent a carefully controlled \u003cstrong\u003e72-hour natural process fermentation\u003c\/strong\u003e guided by \u003cstrong\u003eLALCAFÉ CIMA yeast\u003c\/strong\u003e. This extended fermentation was designed to enhance fruit expression, sweetness, and mouthfeel while preserving balance and the distinctive character of the estate.\u003c\/p\u003e\n\u003cp\u003eFollowing fermentation, the cherries were slowly dried on raised beds under carefully monitored conditions until the ideal moisture content was achieved.
