This lot begins with carefully handpicked, fully ripened coffee cherries that are frozen in an industrial freezer for 48 hours. This freezing step enhances cellular breakdown, allowing deeper infusion of flavours during the next stage. The cherries are then anaerobically fermented with yeast, developing a complex and layered profile, before being slowly dried on raised beds for 18 days to lock in clarity and sweetness.
The result is a strikingly expressive cup—vivid, structured, and deeply aromatic. Expect a unique interplay of tea-like elegance and dark fruit intensity, with a profile that stands apart in both complexity and character.
