From the renowned CT Estate in Chikmagalur, this lot is crafted using a shade-dried red honey process, handled with exceptional precision by Sufyan. Cherries are pulped and dried with part of their mucilage intact — the “red honey” layer — which boosts sweetness and enhances natural fruit depth.
Drying takes place entirely under shade, never under direct sun. At approximately 1150 MASL, temperatures are strictly maintained below 33°C, ensuring:
