From Ratnagiri Estate’s Kere Patte block, this microlot showcases Catuai cherries harvested at an impressive 25.6 Brix. Fermented anaerobically for 48 hours inside sealed bio-fermenters with Intenso microbes, the cherries were then slow-dried on raised beds for 23 days using a natural process.
The cup is explosive yet clean — a harmony of punchy red fruits, sparkling acidity, and layered sweetness. This is Ratnagiri craftsmanship at its finest.
