Carefully handpicked ripe cherries from the Chimma's Katbai Block undergo a meticulously controlled 48-hour anaerobic fermentation, encouraging expressive fruit development while preserving balance and clarity. The coffee is then shade dried for 29 days, allowing sugars to develop gradually while maintaining vibrant aromatics and a silky, refined cup structure.
